500g of Chunks from the same Sherry Barrels used to age Premium Tasmanian Whisky – Batch lots will contribute to product variation
Soak 100g per litre as a general guide or to your personal taste. We have found that the following produces the best results and yield:
First Soaking: Add 2.5 litres of spirit to 500g of Pure Distilling Chunks and leave to soak for 14 days. Drain the spirit from the chunks and filter through a paper filter to remove any dust particles. This should be kept for your personal stocks.
Second Soaking: add a further 2.3 litres of spirit and soak for 14-28 days depending on taste, drain and filter as per First Soaking.
Third Soaking: add a further 2.3 litres of spirit and soak for 5-6 weeks depending on taste, drain and filter as per First Soaking. This third run can be improved by adding a Pure Distilling Essence. Use for relatives and friends you don’t really like that much!
