Potassium Sorbate (E202) also known K40 Stabiliser is a food grade preservative which is used in many beverages and foods such as wine, apple cider, cheese, yoghurt, dried meats and baked goods.
Potassium Sorbate acts to inhibit the growth of spoilage molds and yeasts to prevent spoilage and prolong shelf life of the product.
Potassium Sorbate is also useful in preventing unwanted fermentation after back sweetening wine or cider.
It is best to dissolve in must or or water before adding to the wine or cider.
